I am very thankful to the author as I was thinking of helping my father start a fast-food business. All I want to know was in this book in a very crisp manner. The book gives us a lot of information about the food business everything from production, transportation, storing, preparing and all. Who needs to register their business and who need to get a license and difference between state licensing and central licensing. How to clean, sanitize food products, containers, storage area and how to groom staffs and train them. What are the hazards that we should be aware of. The author also describes Food grade plastics which are to be used for what.
This book really helped me and I think everyone should read to know how to maintain our own kitchen and not overstock anythings, clean regularly, who to maintain containers and kitchen stuff.
